ABSTRAK

Membaiknya pasar makanan ringan dan juga bertambahnya tingkat konsumsi masyarakat membuat penjualan beberapa perusahaan makanan ringan di Indonesia semakin mengalami peningkatan. Hal ini membuat PT. X Food harus meningkatkan efisiensi produksi agar lebih kompetitif di pasar global khususnya untuk pemakaian sumber daya yang ada. Kriteria pencapaian efisiensi produksi berkaitan erat dengan jumlah pemborosan waste yang terjadi di setiap proses produksi. Besarnya jumlah pemborosan yang terjadi akan mengakibatkan terganggunya aktifitas fisik maupun aliran informasi yang kemudian akan berdampak terhadap tingginya biaya operasional dan ketepatan waktu pemenuhan permintaan konsumen serta kualitas produk menjadi tidak sesuai dengan harapan konsumen. Oleh karena itu diperlukan sebuah pendekatan untuk mengeliminasi pemborosan yang terjadi dan melakukan perbaikan kualitas dengan menggunakan pendekatan Six Sigma. Penelitian ini bertujuan untuk mencari solusi yang dapat menurunkan jumlah defect kue Malkist yang terjadi menurunkan jumlah pemborosan yang terjadi pada bagian produksi dan meningkatkan performa kualitas kue Malkist. Dengan menggunakan metodologi Lean Six Sigma yakni DMAIC DefineMeasure Analyze Improve dan Control. Pada tahap Define dilakukan identifikasi pemborosan menggunakan Value Stream Analysis Tools VALSAT. Dalam penelitian ini diperoleh kinerja PT.X dalm memproduksi kue malkist dengan level sigma sebelum perbaikan adalah 4.35 sigma dimana nilai ini merupakan standar kinerja industri secara internasional. Pemborosan yang sering terjadi di area produksi adalah pemborosan yang palinh sering terjadi adalah Defect 2275 Transportation 2068 dan Waiting 1310.Penyebab utama masalah kualitas adalah banyaknya kue gosong dan banyaknya terdapat waiting in process WIP yang tidak memiliki nilai tambah bagi produk. Value added ratio VAR sebelum perbaikan sebesar 7767 dengan total keseluruhan proses sebesar 37675 menit sedangkan setelah penerapan perbaikan nilai VAR meningkat sebesar 25273 dengan total keseluruhan proses 33225 menit.


ABSTRACT

Improved market snacks and also increase the level of public consumption make snacks sales some companies in the country increased further. It makes PT.X must increase efficiency food production to more competitive in global markets especially for discharging resources exist. Criteria the production efficiency closely related to the extravagance occurring in any the production process. The amount of extravagance happens to be causing disruption of physical activity and the flow of information would then impact on high operational cost and timing fulfillment of consumer demand and product quality was in conformity with expectation consumers. Because of that required a approach to eliminate waste happened and doing quality improvements by using approach six sigma. This research aims to find a solution that can reduce the number of defects Malkist cake going lowering the amount of waste that occurs in the production and improve the performance of the quality of the cake Malkist. Using Lean Six Sigma methodologies namely DMAIC Define Measure Analyze Improve and Control. In the Define was done using Value Stream waste identification Analysis Tools VALSAT. In this research PT.X the performance of producing cake obtained performance with the level of sigma Malkist 4.35 sigma improvement is before this is where the value in international industry performance standards .Often occurring in the area waste is waste production that often happens is Defect 2275 Transportation 2068 and Waiting 1310 .The main cause the problem of the quality of the cake is charred and many there are waiting in process WIP that having no value added for the product .Value added ratio VAR before improvement is 767 with a total improvement of the whole process of 37675 minutes while after the application of the improvement of the value of VAR increased by 25273 and 33225 minutes with a total of the whole process
