EXPERIMENTAL TEST OF CHIMNEY OPENING INFLUENCE IN THE OVEN FOR DRYING VELOCITY OF GLUTINOUS RICE CRISPIES

ABSTRAK

Industri rumah tangga yang memproduksi krupuk rengginang masih banyak yang menggunakan proses pengeringan dengan sumber panas matahari sehingga menyebabkan proses pengeringan berlangsung lama. Untuk menunjang proses pengeringan diperlukan suatu alat pegering yaitu oven yang menggunakan sumber panas gas LPG. Oven ini dilengkapi cerobong yang berfungsi sebagai sistem sirkulasi untuk membuang uap jenuh atau perpindahan massa di dalam pengering akibat proses pengeringan sehingga waktu pengeringan menjadi lebih cepat. Untuk memperkecil kerugian panas Qloss yang keluar menembus dinding pengering. dinding pengering dilapisi galvalume dan glasswool. Ada dua proses pengeringan yang terjadi yaitu proses perpindahan panas dan proses perpindahan massa. Dari hasil pengujian didapat data terbaik dengan bukaan cerobong 50 terbuka. Panas yang tersimpan Qst sebesar 287149 W untuk mengeringkan bahan basah rengginang dengan kapasitas 5 kg dalam waktu 225 jam panas untuk menguapkan produk Qevap sebesar 154 W dan kandungan air yang dikeluarkan bahan sebesar 1176 dan menghabiskan bahan bakar LPG sebesar 0516 kg.


ABSTRACT

Home industries that produced glutinous rice crispies still use drying process with sun-dried so that it cause drying process need long tim . To support the drying process its needed a dryer. Its Oven which use heat resources of LPG Gas. This oven is equipped by chimney which fuction as circulation system to waste saturated vapor and mass transfer in the dryer as the drying process effect so that the times of drying process become faster than before. To minimize Qloss break through the wall of dryer. The wall is coated by galvalume and glasswool. There are two drying process that is heat and mass transfer process. The calculation result produces good data with 50 chimney opening. Heat storage Qst is 336393 W to dry wet materials of glutinous rice crispies with 5 kg capacities for 225 hours the heat to evaporate product Qevap is 154 W and the water content out of the material is 1176 and the LPG fuel needed is 0516 kg.
