ABSTRAK

Kalsium laktat merupakan garam dari asam laktat yang paling banyak kegunaannya dalam industri makanan misalnya sebagai campuran makanan untuk ternak petelur . Kalsium laktat dihasilkan dengan proses fermentasi dari produk-produk yang mengandung karbohidrat seperti molasses hidrolisa pati dari gandum. Proses pembuatan kalsium laktat dilakukan dengan tiga tahap yaitu tahap persiapan tahap fermentasi dan tahap pemurnian. Tahap persiapan molasses dihidrolisa dengan katalis asam yaitu H2SO4 sehingga menjadi glukosa dan fruktosa. Tahap fermentasi glukosa dan fruktosa difermentasi dengan Lactobacillus delbrueckii untuk menghasilkan asam laktat pada suhu 50oC dengan pH 5-7 selama 4-6 hari. Kemudian asam laktat direaksikan dengan CaOH2 berlebih sehingga terbentuk kalsium laktat. Tahap pemurnian kalsium laktat dipekatkan sampai 50. Kemudian larutan kalsium laktat dikeringkan dalam spray dryer untuk mendapatkan serbuk kalsium laktat dengan konsentrasi kalsium laktat 9305 air 494 dan protein 199. Pabrik ini direncanakan beroperasi secara semi kontinu selama 330 haritahun dengan kapasitas 2.5099 kghari. Pabrik ini membutuhkan molasses sebagai bahan baku sebanyak 5.03915 kghari dan bahan penunjang seperti maltsprout 72486 kghariNH42HPO4 47841 kghari CaOH2 793701 kghari Lactobacillus delbrueckii 307468 kghari and H2SO4. 00626 kghari. Kebutuhan air berupa air sanitasi 112 m3hari air pendingin 90654 m3hari air umpan boiler 191922 m3hari dan air proses 978 m3hari.


ABSTRACT

Calcium lactate is a salt of lactic acid is the most widely uses in the food industry for example as a mixture of food for cattle laying. Calcium lactate is produced by the fermentation of the products containing carbohydrates such as molasses starch hydrolysis of the grain. The process of making calcium lactate is divide into three stage preparatory stage fermentation and purification stage. Preparation stage molasses hydrolyzed by the acid catalyst H2SO4 so into glucose and fructose. Stage of fermentation glucose and fructose fermented with Lactobacillus delbrueckii to produce lactic acid at 50 C with pH of 5-7 for 4-6 days. Then lactic acid is reacted with Ca OH2 to form calcium lactate overproduction. Purification stage the calcium lactate was concentrated to 50. Then a solution of calcium lactate were dried in a spray dryer to obtain a powder. Thus the concentration of calcium lactate obtained calcium lactate 93.05 water 4.94 and protein 1.99.. The plant is planned to operate semi-continuously for 330 days year with a capacity of 2509.9 kg day. This plant requires molasses as raw material as 5039.15 kg day and supporting materials such as maltsprout 72.486 kg day NH42HPO4 47841 kg day CaOH2 793.701 kg day Lactobacillus delbrueckii 307.468 kg day and H2SO4. 0.0626 kg day. Needs such as water sanitation water 112 m3 day water coolers 906.54 m3 day boiler feed water 191922 m3 day and 9.78 m3 process water day
