PEMBUATAN GULA MERAH DENGAN BAHAN DASAR TEBU SACHARUM OFFICIANARUM

ABSTRAK

Pertumbuhan produksi gula tidak seimbang bila dibandingkan pertumbuhan konsumsi. Hal itu tidak diimbangi dengan pertumbuhan industri gula yang signifikan. Padahal industri gula merah merupakan salah satu industri yang berpotensi besar meraup keuntungan. Hal ini disebabkan karena proses pembuatannya yang relatif mudah alat-alat yang dibutuhkan sederhana dan biaya investasinya relatif kecil dan dapat menjadi alternatif pengolahan tebu selain diolah menjadi gula kristal di pabrik gula. Tetapi kondisi di lapangan menunjukkan bahwa penambahan kapur tidak terukur dan kualitas gula merah di pasaran tidak sesuai dengan SNI. Berdasarkan hal tersebut maka dilakukan penelitian terhadap proses pembuatan gula merah dengan bahan dasar tebu dengan metode penambahan larutan kapur dan flokulan PA-322. Percobaan pembuatan gula merah dengan bahan dasar tebu meliputi 10 tahap. Yaitu Persiapan bahan baku penggilingan filtrasi analisa nira tahap I defekasi flokulasi analisa nira tahap II pemasakan pencetakan dan analisa rendemen. Kesimpulan yang diperoleh dari inovasi produk yang telah dilakukan yaitu nilai rendemen sebesar 5.95 nilai brix akan semakin kecil jika penambahan konsentrasi larutan kapur dan flokulan semakin tinggi nilai ICUMSA akan semakin rendah dengan bertambahnya konsentrasi larutan kapur dan flokulan yang ditambahkan absorbansi akan semakin rendah jika nilai ICUMSA juga semakin rendah percobaan yang telah dilakukan telah sesuai dengan standar SNI dan dapat dipasarkan dan metode penambahan flokulan yang dilakukan di pabrik gula kristal dapat diaplikasikan di percobaan pembuatan gula merah dari tebu sehingga didapat nilai ICUMSA sebesar 175688 IU yang memenuhi standar SNI


ABSTRACT

Unbalanced growth of sugar production is unbalanced if compared to consumption growth. This was not offset by significant growth in the sugar industry. Sugar industry is one industry that has big potential to make a profit. This is because the manufacturing process is relatively easy the tools needed simple relatively low investment costs and can be an cane sugar alternative treatment than be processed into crystals in the sugar factory. Under these conditions conducted research on the process of making brown sugar with sugar cane as basic material with adding lime solution and flocculants PA-322. Making raw sugar with sugar cane as basic material experiment includes 10 stages. First is preparation of raw materials milling filtration phase I analysis defecation flocculation phase II analysis cooking printing and yield analysis. The Conclusion of the experiment that have been conducted are the value of the yield was amounted to 5.95 the value of Brix will be smaller if the addition of lime solution concentration and flocculant were added are higher ICUMSA value would decrease with the increasing concentration of lime and flocculant solution were added absorbance will be lower if the ICUMSA value also is also lower and experiments have been carried out in accordance with SNI standards and can be marketed and the adding flocculant methods that have done on crystal sugar factory can be applied to this making raw sugar with sugar cane as basic material experiments with the result that achieved ICUMSA value is 175688 IU in accordance with SNI standards.
