STUDI KINETIKA PEMBENTUKAN KARAGINAN DARI RUMPUT LAUT

ABSTRAK

Karaginan merupakan senyawa polisakarida galaktosa. Senyawa-senyawa polisakarida mudah terhidrolisasi dalam lautan yang bersifa asam dan stabil dalam suasanan basa. Karaginan juga merupakan senyawa hidrokoloid yang terdiri atas ester kalium natrium magnesium dan kalium sulfat dengan galaktosa 36 anhidrogalaktosa kopolimer. Karaginan adalah suatu bentuk polisakarida linear dengan berat berat molekul di atas 100 kDa atau berkisar antara 100-800 ribu Da. Analisa identifikasi karaginan dengan menggunakan spektrofotometri FTRI menunjukkan bahwa jenisnya adalah kappa karaginan dan iota karaginan. Semakin besar suhu ekstraksi rate pembentukan karaginan semakin meningkat. Dengan persamaan reaksi rate adalah rp kCAn harga Ea E.Spinosum NaOH 6 4398937 Jmol dan harga Ea E.Cottoni NaOH 6 4306652 Jmol. Untuk harga k masing-masing pada saat NaOH 6 yaitu E. Spinosum k 80 oC 03126079 k 85 oC 03265878 c. k 90 oC 04731513. E. Cottoni k 80 oC 046559 k 85 oC 051523 dan k 90 oC 069823. Dari hasil penelitian yang di dapat kecepatan reaksi pada E. Spinosum dan E. Cottoni ditetapkan orde reaksi 15.


ABSTRACT

Rumput Laut E.Cattoni E.Spinosum NaOH Kinetika Carageenan also polysacaride galactose compound. Polysacaride compounds are easy to hydrolize on acid solition and stable on base souition. Carageenan were also hydrocoloid compound consist of ester calium natrium magnesium and calium sulphate with galactose 36 anhidrogalactose copolyme. Carageenan is from of linier polysacaride with molecular weight above 100 kDa or around 100.000 800.000 Da. Analyzing carageenan identification by spectrofotometer FTIR shows the spesies is kappa carageenan and iota carageenan. More extraction temperature the more carageenan rate forming. By reaction equation rp kCA n Ea value E.Spinosum with NaOH 6 4398937 Jmol and Ea value E.Cottoni with NaOH 6 4306652 Jmol. Ufor each value of k on NaOH 6 are k on E. Spinosum k 80 oC 03126079 k 85 oC 03265878 c. k 90 oC 04731513. E. Cottoni k 80 oC 046559 k 85 oC 051523 and k 90 oC 069823. From the result of this experiment rate reaction on E.Spinosum and E. Cottoni result an order about 15.
