Sektor pertanian hingga saat ini masih memberikan sumbangan cukup besar
untuk PDB Indonesia. Namun fakta menunjukkan bahwa post harvest waste dari produk
agrikultur dapat mencapai 20-60 dari total produksi. Artinya dengan waste hingga
mencapai 60 dapat menyebabkan target produksi tidak terpenuhi. Sehingga diperlukan
perbaikan pada inbound supply chain untuk dapat menanggulangi waste yang terjadi.
Subsektor tanaman perkebunan menjadi hal yang menarik untuk dibahas angka ekspor
yang mulai menunjukkan trend positif tahun-tahun belakangan ini namun angka produksi
menunjukkan trend negatif. Penelitian ini akan mencoba melihat waste yang terjadi di
Food Supply Chain Kopi menggunakan metode Value Chain Analysis dengan
memperhatikan indikator kinerja yang kritis. Pada Metode Value Chain Analysis akan
digambarkan Current State Value Stream Mapping CSM dan dilakukan eliminasi waste
yang ditangkap dari peta CSM tersebut dan dilanjtkan dengan penggambaran Future State
Value Stream Mapping FSM. Analisis juga dilanjutkan dengan analisis Benefit Cost
Ratio untuk mengetahui seberapa besar benefit yang diperoleh bila melakukan
rekomendasi untuk eliminasi waste yang ditangkap dalam rantai pasok yang dilakukan.
ABSTRACT
Agricultural sector still provide sufficiently big for gross domestic bruto in
Indonesia. In fact data shows that post-harvest waste happened in Agricultural Supply
Chain affect 20-60 from total production. Therefore redesigning the supply chain is
needed to fix waste happened in certain sector on agricultural supply chain. Coffee
Plantation subsector is interesting to be elaborated because of export number raising.
Nevertheless the raising of export number is doesnt followed by the raising number of
production that can be hypothesized caused post harvest waste. This study try to elaborate
the waste using Value Chain Analysis Method with combination of critical performance
indicator. Value Chain Analysis will maps the Current State Value Stream Mapping
CSM and trace the waste and then eliminate it. It is continued by mapping of Future
State Value Stream Mapping FSM. Analyzing supply chain is using Benefit Cost Ratio
in order to know how much benefit will be get than the cost will be taken out to do the
recomendation of fixing the supply chain.
