PEMBUATAN KARAGINAN DARI GANGGANG MERAH RHODOPHYCEAE

ABSTRAK

Karaginan adalah getah rumput laut yang bersifat hidrocolloid diperoleh melalui proses ekstraksi ganggang merah rhodophyceae jenis Eucheuma cottonii dengan larutan alkali panas. Karaginan diendapkan melalui metode KCl dan Metode Alkohol. Umumnya karaginan digunakan sebagai stabilizer thickener gelling agent dan additive. Dalam penelitian ini dipilih metode pengendapan dengan alkohol. Adapun prosedur penelitiannya meliputi pencucian ganggang dengan air garam lalu pengekstrakan ganggang dalam suasana basa menggunakann larutan alkali NaOH dalam konsentrasi NaOH dan waktu estraksi yang divariabelkan pada suhu konstan 90oC. Filtrat tersebut dicampur dengan isopropyl alcohol sebanyak 2 kali volume filtratdiaduk sampai semua karaginan terendapkan menjadi gumpalan serat dikeringkan menjadi lembaran. Selanjutnya menganalisa hasil karaginan seperti berat identifikasi tipe karaginan kadar air dan viskositas.. Dari penelitian diketahui bahwa jenisnya adalah Kappa Carrageenan yang meningkat secara eksponen seiring bertambahnya konsentrasi NaO. Namun ada kondisi tertentu hasil yang didapat menurun karena penambahan NaOH yang berlebih dan waktu ekstraksi yang terlalu lama. Kondisi terbaik padapenelitian ini adalah konsentrasi NaOH 8 selama 15 jam menghasilkan Kappa karaginan sebesar 136248 gram.


ABSTRACT

Carrageenan is a seaweeds sap with hydrocolloid properties obtained by seaweed extraction with hot alkaline solution of certain species from the class red algae Rhodophyceae that is Eucheuma cottonii. Carrageenan is precipitated by KCl and Alcohol Method. Commonly Carrageenan has function as stabilizer thickener gelling agent and additive. Precipitation Carrageenan with Alcohol method has been selected. The procedures consist of washing algae with salt water then extract it in base condition using vary concentration of alkaline solution and time extraction at constant temperature 90oC. Filtrate is added by Isopropyl Alcohol with its volume twice more than filtrates volume stirred until all the Carrageenan is precipitated as a fibrous coagulum then dry it into leaf shape. Next step is analyzing yield Carrageenan by weight identification type of Carrageenan moisture content and its viscosity. From the experiment the type is Kappa Carrageenan which is increases nearly exponentially with NaOH concentration. But in certain time the yield is decrease because NaOH is exceed and very long term of extraction time. The best condition in this research are using concentration NaOH 8 during 15 hour yielding 136248 grams of Kappa Carrageenan.
