ABSTRAK

Sanggar Kue Ayu adalah salah satu perusahaan makanan berupa kue baik kue kering maupun basah yang menerapkan sistem job order. Salah satu produk unggulan perusahaan adalah kue bakpia yang jumlah produksi perbulan mencakup 60 dari jumlah produksi keseluruhan perusahaan. Sebagai perusahaan yang bergerak dibidang makanan agar selalu kompetitif dipasaran haruslah mempunyai kualitas yang bagus. Sistem pengendalian kualitas haruslah dimulai dari datangnya bahan baku hingga output produk yang akan dipasarkan dengan cara menciptakan sistem produksi yang lebih efisien lebih ramping dan stream line dari system produksi yang telah ada saat ini. Karena itu upaya untuk mengurangi kegiatan yang tidak memiliki nilai tambah nonvalue adding activity dan pemborosan waste menjadi fokus untuk dilakukan pembenahan. Setelah mendefinisikan permasalahan yang ada pada perusahaan tahap berikutnya adalah mengidentifikasi waste yang paling berpengaruh terhadap proses produksi kemudian dilakukan pengukuran kapabilitas produksi dan CTQ Critical to Quality lalu dilakukan perhitungan SOD saverity occurance detection menggunakan FMEA untuk memperoleh nilai RPN Risk Priority Number. Berdasarkan analisa RPN tahap selanjutnya adalah melakukan improveiv terhadap komponen waste dengan nilai RPN tertinggi. Dengan metode tersebut diharapkan waste akan dapat diturunkan.


ABSTRACT

Sanggar Kue Ayu is one of the food companies include cookies and cake- that production as job order. One of the most popular products is bakpia. It produces 60 of the total production per month. s a food company surviving is the main issue. To urviving the competition the quality must be a main issue. uality control process must begin from raw material ncoming to finish goods. The process is to make an efficient nd stream production system. Thats why the effort to liminate non-value adding activity and waste will be the ocus to improve. fter define a problem next step is to identify most ffect waste in the process. And then is to measure production apability and Critical to Quality. After CTQ has been dentified the calculation is being done to SOD severityoccurrence detection using FMEA to get RPN Risk Priority umber value. From RPN analysis the next step is to mprove the highest RPN waste. As the improvement is done he result is expected to decrease waste level and improve hole production.
