PABRIK MALTOSA DARI TEPUNG TAPIOKA DENGAN HIDROLISA ENZIM-ENZIM

MALTOSE PLANT FROM TAPIOCA FLOUR WITH ENZYMES HYDROLYSIS PROCESS

ABSTRAK

Maltosa merupakan salah satu gula alternatif yang berasal dari hidrolisa pati. Pabrik maltosa ini menggunakan bahan baku berupa tepung tapioka. Pabrik ini direncanakan berlokasi di Gunung Terang, Tulang Bawang, Lampung dan beroperasi secara semi batch selama 24 jam/hari dan 330 hari/tahun. Kapasitas produksi yang dihasilkan sebesar 60.000 ton/tahun dan pembuatan maltosa ini menggunakan proses hidrolisa enzim-enzim. Proses produksi Maltosa terdiri dari 3 tahap. Tahap pertama adalah proses gelatinasi tepung tapioka. Tahap kedua adalah hidrolisa pati menjadi dekstrin, maltosa, dan glukosa pada reaktor dekstrinasi oleh α-amilase pada suhu 95oC dan tekanan atmosferis selama 3 jam kemudian dekstrin diproses lebih lanjut di reaktor sakarifikasi oleh β-amilase, dan pullulanase mejadi maltosa pada suhu 65oC selama 48 jam. Setelah itu, larutan maltosa masuk tahap pemurnian melalui proses karbonisasi, filtrasi dan ion exchanger. Pada tahap akhir larutan maltose dipekatkan sampai 75% dalam triple effect evaporator. Untuk mencapai kapasitas produksi tersebut, digunakan bahan baku 5557,9 kg/jam. Kebutuhan air pada pabrik maltosa meliputi air sanitasi, air pendingin, air umpan boiler, dan air proses masing-masing sebesar 15,6255 m3/jam, 34,5435m3/jam, 232,296 m3/jam, dan 48,225 m3/jam.


ABSTRACT

Maltose is a sugar alternative derived from starch hydrolysis. Maltose plant uses raw material in the form of tapioca flour. The plant is located in the Gunung Terang, Tulang Bawang, Lampung and operate semi-batch for 24 hour/day and 330 days/year. Production capacity is 60.000 tons/year and the manufacture process of enzymes hydrolysis to produces maltose. Maltose production process consists of three stages. The first stage is the gelatinization tapioca flour. The second stage is the hydrolysis of starch into dextrin, maltose, and glucose in the dextrination reactor with α-amylase at 95oC and atmospheric pressure for 3 hours and then dextrin further processing in the saccharification reactor by β-amylase, and pullulanase into maltose at 65oC for 48 hours. After that, maltose solution enter through the refining step of carbonization process, filtration and ion exchanger. The final stage maltose solution was concentrated to 75% in triple effect evaporator. To achieve production capacity, raw materials used 5557.9 kg/h. Maltose plant water needs, includes sanitary water, cooling water, boiler feed water and process water, each for 15 m3/hr.6255, 34.5435 m3/hr, 232.296 m3/hr, and 48.225 m3/hr.
