Khitin merupakan polimer alam yang melimpah di alam yang dapat diisolasi dari limbah kulit udang. Khitin mempunyai sifat hidropobik sehingga aplikasinya terbatas. Namun khitin dapat dideasetilasi dalam larutan NaOH pekat menjadi khitosan yang bersifat hidropilik sehingga aplikasi lebih luas. Proses deasetilasi khitin menjadi khitosan dapat dipengaruhi oleh suhu konsentrasi larutan NaOH dan waktu. Pada penelitian irii telah dikaji pengaruh konsentrasi larutan NaOH dan waktu refluk terhadap proses deasetilasi khitin menjadi khitosan. Hasil penelitian menunjukkan bahwa semakin besar konsentrasi larutan NaOH semakin besar laju prosen deasetilasi. Untuk larutan NaOH dengan konsentrasi 40 wv 50 wv dan 60 wv menghasilkan laju deasetilasi sebesar 245 per jam 295 per jam dan 314 per jam. Namun peningkatan konsentrasi larutan dan waktu refluk selain meningkatkan proses deasetilasi juga menimbulkan efek samping berupa proses degradasi rantai khitosan yang berakibat pada penurunan massa molekul rata-rata khitosan. Semakin besar konsentrasi larutan NaOH semakin besar efek degradasi rantai yang ditimbulkan. Untuk larutan konsentrasi dengan konsentrasi 40wv 50wv dan 60wv menghasilkan laju penurunan massa molekul rata-rata sebesar 07.105 g.moljam 28.1.05 g.moljam dan 33.105 g.moljam.


Chitin is the abundant naturally occurring polymer which can be isolated from a shrimp shell wastes. Chitin is highly hydrophobic so that its application is limited. However chitin can be deacetylated by concentrate NaOH solution to produce chitosan which is hydrophilic and has more application. The deacetylation process of chitin to produce chitosan is affected by temperature concentration of NaOH solution and reflux time. In this research has been studied effect of NaOH solution concentration and reflux time on the deacetylaion process of chitin to produce chitosan. Results show higher concentration of NaOH solution produces higher speed of deacetylation process of chitin. The process in 40wv 50wv and 60wv NaOH solution produces 2.45 per hour 2.95 per hour and 3.14 per hour speed of deacetylation. However the increasing of deacetylation process related to higher concentration of NaOH and longer of reflux time also produces a side effect which is degradation process of chitosan chain which produces decreasing of average molecular weight of chitosan. Higher concentration of NaOH solution produces higher effect of chain degradation. The degradation in 40wv 50wv and 60wv NaOH solution produces 0.7.105 gram per mol per hour 2.8.105 gram per mol per hour and 3.3.105 gram per mol per hour decreasing speed of average molecular weight.
